When Neal's Yard Dairy opened in London in 1980, it initially produced it's own fresh cheeses, yogurts, and butter. One day, a box showed up at the dairy containing a sweaty little goat cheese from Devon. The crew tried the cheese and fell in love. Proprietor Randolph Hodgson traveled to Devon and bought almost every cheese he tasted; hence, their mission began.
Neal's Yard searches the British Isles for true farm cheeses, some on the verge of extinction. In all these years, Neal's Yard has almost single-handedly resurrected the tradition of British farm cheeses. Visiting the farms weekly, Neal's Yard buyers taste and select only the most outstanding cheeses.
After purchase, the cheeses are transported to London where they are racked and taken care of in special cellars. When the cheeses approach maturation, another selection process begins to decide which cheese are ready for shipping.
Neal's Yard requires that all of their vendors are knowledgeable not only about their cheeses, but the care and handling they require for storage and shipping. James Cook's longtime relationship with Neal's Yard will insure that Cook & D'Amico receives new shipments from London every two weeks.
