With our exciting new plans for the Dahlia Lounge and the opening of the Palace Kitchen for lunch, some staffing changes occurred in our increasingly busy kitchens. Matt Costello, who has been the chef at the Palace since its opening, returns to the Dahlia Lounge where he began working some years before the Palace opened. Matt replaces Johnathan Sundstrom who we are sad to see go but wish him well as he moves on to other new ventures.
Moving into the opening as Palace chef is Duskie Estes, who has previously served as our Corporate Sous Chef, responsible for many of the charity events, catering and filling in as needed in rotation throughout the three restaurants. We welcome into that position Anna Vogel, who brings a great deal of cooking experience from her various positions in Australia and the East Coast.
Finally, we welcome our new Executive Pastry Chef, Toby Matasar, who is moving to Seattle from New York where she worked for The City Bakery, Arcadia and the Monkey Bar.
LOVE, CHAOS AND DINNER
Tom recently joined the board of One Reel, producers of the wonderful dinner theater extraordinaire, Teatro Zinzanni. The current menu at Teatro was designed by Tom. There are still some seats left before the show heads south to San Francisco in the New Year, but we suggest you hurry to purchase them if you haven't yet. It is a GREAT show!
