Fall Cookbook Dinner Series
Every fall we look forward to the fresh smell of rain, leaves turning color, a bit of a chill in the air and the wealth of glossy new cookbooks that suddenly appear on bookstore shelves. Once in a while, we come across a cookbook that is so tempting, seductive and delicious sounding that we
can't wait to get into the kitchen to try out a few recipes. We hope you'll join us for this dinner series at the Dahlia Lounge because we know we’re going to have a blast cooking up these fabulous sounding dishes for you. To make these dinners even more special,
R.E. Mason, Dahlia wine sommelier, will expertly match three wines with each dinner.

The Gift of Southern Cooking
Edna Lewis & Scott Peacock
(Knopf, 2003)
We've been head-over-heels in love with Edna Lewis ever since she wrote her first cookbook,
The Taste of Country Cooking, 27 years ago. That book was based on the food of her childhood in a Virginia farming community founded by freed slaves. We were thrilled to discover that Edna and her Alabama-born co-author, Scott Peacock, have recently published an extraordinary new book on the traditional cooking of the American South.
The Menu
Carolina Low Country Shrimp Paste
Pimento Cheese with Beni Wafers & Cheese Straws
Miss Lewis' BLT Salad
Southern Pan Fried Chicken with Tomato Gravy
Whipped Rutabagas
Assembly of Southern Greens Cooked in Smoked Pork Stock

The Zuni Cafe Cookbook
Judy Rodgers
(Norton, 2002)
The Zuni Cafe has been one of our favorite restaurants for decades. It's worth a trip to San Francisco for a plate of their hand cured anchovies, their perfect burger, or their world famous roast chicken with warm bread salad. This book won "Best Cookbook" at the 2003 James Beard Awards. Zuni also won the award for "Outstanding Restaurant".
The Menu
Oysters on the Half Shell with Sauce Mignonette
"New Year's Eve" Gourgères with Arugula, Bacon, and Pickled Onion
Baked Artichokes with Onions, Lemons, Black Olives, and Mint
Zuni Roast Chicken with Bread Salad
Zuni Cheese Course: Cheeses paired with their Perfect Complements

Tom's Big Dinners
Tom Douglas
(William Morrow, 2003)
One of our favorite books to be published this fall has got to be our second cookbook,
Tom's Big Dinners. Every chapter features a menu, from cocktails to dessert, with recipes, do-ahead tips, technique tips, and wine suggestions. "A Chinese Feast", shows off Tom's love of all things Chinese - from the sweet-hot thrill of sugar and cayenne fried almonds on the palate to searing black bean clams in a hot wok. The menu will be served family style in four courses.
The Menu
Star Anise Vodka Dragons
Sweet and Hot Fried Almonds
Crispy Shrimp Rolls with Sweet Chile Sauce
Wok Fried Clams with Chinese Black Beans
Shiitake Peanut Noodles
Sticky Finger Ribs
Five Spice Roast Chicken
Baby Bok Choy with Garlic Oil
Aromatic Steamed Rice
Mango Sorbet and Coconut Macaroons
The cost of each dinner is $75, which includes three wine pairings. If you would
like to attend all three cookbook dinners, we are offering a special price of
$199. Taxes and gratuities are additional. To make reservations, please call
(206) 682-4142 or you may email privatedining@tomdouglas.com. Wines paired with
