Panettone: A History
Panettone, a rich, candied fruit and nut yeast bread from Milan, is the national Christmas bread of Italy. There are several charming stories about how this bread originated and got its name. We like the story in Celebration Breads by Betsy Oppenneer (Simon and Schuster, 2003).
"A young Milanese noble falls in love with the daughter of a baker named Toni. The family of the young man opposes the marriage because of the young girl's humble beginnings. Knowing that his family values wealth above all, the nobleman makes it possible for Toni to purchase the finest ingredients and encourages him to bake a bread like none before. Toni creates a masterpiece (a delicious sweet bread) that makes his reputation and fortune, and the noble wins the hand of the baker's daughter."
The bread ended up being the 'pan di Toni' (Bread of Toni), hence the name.
The Dahlia Bakery version of Panettone is a light-textured, slightly sweet brioche, studded with candied citrus peel and golden raisins. Bring home a loaf of this festive bread to serve for dessert or with afternoon coffee. Panettone is great toasted and buttered for breakfast and it makes fabulous French toast for Christmas morning!
