CUCUMBER YOGURT
Sprinkle the grated cucumber with the 1/4 teaspoon of salt and place it in a sieve set over a bowl. Allow the cucumber to drain for half an hour. Use your hands to squeeze as much liquid as possible from the cucumber, discarding all cucumber liquids. In another bowl, combine the drained cucumber with the yogurt, cilantro, mint, lime juice and zest. Season to taste with salt and pepper. Keep chilled. |
