Hot Stove Society
Hot Stove Society is a year-round cooking school operated by Tom Douglas Restaurants. Our goal is to offer a curriculum that ranges widely from light-hearted and sociable to skill-building and challenging. Our classes are about many things from how to cut up a chicken, to how to build a delicious cocktail, to finding out who’s the hottest chef in Portland.
Paramount / Moore Theatre

Chef Alex Chan
Alex Chan grew up in Hong Kong, China where some of his favorite childhood memories included accompanying his mother to the wet markets to do grocery shopping. They bought everything fresh; the only thing he remembers buying in a can was creamed corn. Their kitchen was very simple with only a rice cooker, two wok burners, and a small stove to the side, but his mother worked wonders, making two to three dishes for the family every day, never repeating a dish throughout the week.
When Alex graduated from University of Washington, he wanted to cook professionally, but had no skills nor experience. After watching Tom Douglas cook at the Taste Washington event, Alex bought his cookbook which provided a great excuse to ask for a job. After a couple stages at Dahlia Lounge, Alex moved to the newly formed Tom Douglas Catering team. In 2002, he started going to culinary school, and from there, got a line cook job at Ray’s Boathouse. After that, Alex came back to the Tom Douglas family and “that’s where I really went to school,” he says. Working for the Rub with Love team, Palace Kitchen, Serious Pie, Dahlia Lounge, Lola, and now, lead chef, back in Catering. He is thankful for all the mentors along the way, and for his entire team here in Catering, filled with gracious people thinking about deliciousness every day.
