Smoky Cheddar Dip

INGREDIENTS:
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 cup whole milk (warm)
- 3/4 cup beer (lager, ale, or your favorite beer—not too hoppy)
- 1 tsp Rub with Love Toasted Shallot Mustard
- 2 tsp Rub with Love Smoky BBQ mix
- 2 cups sharp cheddar
- Salt and pepper to taste
INSTRUCTIONS:
- In a saucepan over medium heat, melt butter. Whisk in flour and cook for about 1 minute, stirring constantly (this gets rid of the raw flour taste).
- Slowly pour in the warm milk and beer, whisking until smooth. Cook for 2–3 minutes until slightly thickened.
- Stir in Rub with Love Toasted Shallot Mustard and Smoky BBQ rub. Keep whisking!
- Lower the heat and gradually add in the shredded cheddar, stirring until melted and smooth.
- Season with salt and pepper. If it’s too thick, splash in a little more milk or beer to loosen it up.
