JERK CHICKEN THIGHS

Jerk Chicken Thighs and Sweet Potato

Serves 2 – 4

INGREDIENTS: 

DIRECTIONS:

  1. Preheat grill to medium-high heat, about 350°
  2. Preheat oven to 350°
  3. Place sweet potatoes in oven for about 60 minutes or until the sweet potato is soft.  Remove from oven.
  4. Rub chicken thighs with Jerk Spice and let sit for 5 minutes.
  5. Place chicken thighs skin side down on prepared grill.
  6. Turn occasionally until skin is browned and crispy, about 20 minutes until internal temperature of 165°
  7. Glaze on Ginger Pineapple Teriyaki Sauce.
  8. Finish on grill for 5 minutes over medium-high heat.
  9. Meanwhile, take sweet potatoes and place under coals for the remaining 5 minutes.
  10. Remove both chicken thighs and sweet potatoes and serve.
